It's that time of year again! Time to check in with our QC Manager, Jed, to see what he is whipping up for the holidays. Jed is one of the biggest foodies in the company, and a great resource for new recipes and inventive ways to use our products. Last year, Jed gave us a great recipe for Creamy Mushroom Chicken which featured our European-Style Sour Cream. This year, he brings us a quick and easy holiday treat.

Jed works hard each day to make sure every batch of yogurt we make is top-notch. A recent labor of love for Jed was helping create our line of Authentically Strained Organic Greek Lowfat Yogurts. He enjoys these new products for their richness and high protein content, and for their versatility in cooking and baking. For this holiday season, Jed has created a truly delicious and easy recipe that is sure to delight your family and guests.

No-Bake Pumpkin Spice Yogurt Cheesecake

Ingredients:

Crust

1 ½ cups graham cracker crumbs
6 tbsp. butter, melted
2 tbsp. granulated sugar

Filling

2 8-oz. bars of cream cheese
2 cups Wallaby Organic Plain Greek Lowfat Yogurt
1/2 cup granulated sugar
1 tsp. pumpkin pie spice
1 tbsp. lime juice
1 pinch of salt

Directions:

Crust

1. In a mixing bowl, combine graham cracker crumbs, butter and sugar until blended.
2. Press into the bottom of a well-greased 8-inch or 9-inch spring form pan, tart pan or ramekins.
3. Place in the refrigerator to chill for 30 minutes.

Filling

1. In a mixing bowl, beat the cream cheese, Wallaby Organic Plain Greek Lowfat Yogurt and sugar until smooth.
2. Add in pumpkin spice, lime juice and a pinch of salt.
3. Pour the filling over the chilled graham cracker crust and smooth out the top.
4. Refrigerate for at least 4 hours or overnight.

Looking to cut back on calories and fat in the new year? This recipe can also be made with nonfat or lowfat cream cheese, and with our brand new Wallaby Organic Plain Greek Nonfat Yogurt (coming to Whole Foods Market stores in January 2013!). You can also leave out the pumpkin pie spice, and top with your choice of fresh fruit instead. Delicious!
