It's that time of year again! Time to check in with our QC Manager, Jed, to see what he is whipping up for the holidays. Jed is one of the biggest foodies in the company, and a great resource for new recipes and inventive ways to use our products. Last year, Jed gave us a great recipe for Creamy Mushroom Chicken which featured our European-Style Sour Cream. This year, he brings us a quick and easy holiday treat.

Jed works hard each day to make sure every batch of yogurt we make is top-notch. A recent labor of love for Jed was helping create our line of Authentically Strained Organic Greek Lowfat Yogurts. He enjoys these new products for their richness and high protein content, and for their versatility in cooking and baking. For this holiday season, Jed has created a truly delicious and easy recipe that is sure to delight your family and guests.

No-Bake Pumpkin Spice Yogurt Cheesecake

Ingredients:

Crust

1 ½ cups graham cracker crumbs
6 tbsp. butter, melted
2 tbsp. granulated sugar

Filling

2 8-oz. bars of cream cheese
2 cups Wallaby Organic Plain Greek Lowfat Yogurt
1/2 cup granulated sugar
1 tsp. pumpkin pie spice
1 tbsp. lime juice
1 pinch of salt

Directions:

Crust

1. In a mixing bowl, combine graham cracker crumbs, butter and sugar until blended.
2. Press into the bottom of a well-greased 8-inch or 9-inch spring form pan, tart pan or ramekins.
3. Place in the refrigerator to chill for 30 minutes.

Filling

1. In a mixing bowl, beat the cream cheese, Wallaby Organic Plain Greek Lowfat Yogurt and sugar until smooth.
2. Add in pumpkin spice, lime juice and a pinch of salt.
3. Pour the filling over the chilled graham cracker crust and smooth out the top.
4. Refrigerate for at least 4 hours or overnight.

Looking to cut back on calories and fat in the new year? This recipe can also be made with nonfat or lowfat cream cheese, and with our brand new Wallaby Organic Plain Greek Nonfat Yogurt (coming to Whole Foods Market stores in January 2013!). You can also leave out the pumpkin pie spice, and top with your choice of fresh fruit instead. Delicious!

Because stores are constantly changing their yogurt offerings, they often stop carrying certain flavors and/or brands to make room for new ones. It's always a disappointment when we hear from fans that they can no longer find their favorite flavor of Wallaby. In many instances, consumers look to us for an explanation as to why our yogurt was discontinued from a particular store or chain. Every now and then it's because we've actually stopped making that particular flavor. More often, however, it's because the retailer has decided to no longer carry it. Unfortunately, what many people might not realize is that we don't have much control over which yogurts stores decide to keep and which ones they choose to discontinue.

In some ways, our product distribution kind of works like network TV. Say you have a favorite show that you're really getting into. It's only been on the air for a couple of seasons, so it's just starting to develop a following. Suddenly, as you're gearing up for the next episode or season, you find out that the show's been cancelled and its timeslot is being filled with something else.

When this happens it's not something that the actors or producers making the show have control over—it's the network or TV station making the decision. So what do die-hard fans do when they hear that their favorite show is being cancelled? They tell the TV network that they're not happy about it. And sometimes, when enough fans make their opinion known, the network changes their mind and they bring the show back!

The same can be true for our yogurt and the stores where you shop. There are stores that will carry a certain flavor for a while, but then suddenly decide to take it off the shelf. When this happens, Wallaby fans often want to know why the flavor is gone and ask us to get it back on the shelf. However, just like the actors and producers of a promising yet cancelled TV show, we alone don't have the power to change a store's decision. What we want everyone to know is that you as consumers have the greatest influence over what stores decide to carry. So should your favorite flavor of Wallaby get discontinued from a store, we ask that you use your consumer clout to bring it back!

There are lots of ways to make your demand known. You can start by talking to the Customer Service or Dairy Department the next time you are at the store, and asking why they've stopped carrying your yogurt. You can also contact the store via their website's Contact Us section, and let them know they're making a mistake by not carrying your favorite flavor or variety of Wallaby. If your store has a Facebook page, you can also use their wall to let them know you'd like to see Wallaby brought back, as well as rally support from likeminded fans. By doing these things you will be exercising the power of your consumer voice, and as a result, you'll be much more likely to get the Wallaby flavor you've been missing back onto your store's shelves.

Sometimes our Store Locator might not turn up any results for a specific zip code or city where you're trying to find Wallaby yogurt. If this happens, don't lose hope! Our Store Locator is a great resource for starting your search; however, it comes with one small but important disclaimer. Because we don't sell our yogurt directly to stores, we don't always know exactly which stores are currently selling our yogurt. In many instances we rely on outside sales reps and even consumers to tell us where our yogurt is selling. And while we'd love to put a GPS tracking device on every case of yogurt we make—to see exactly where each ends up—we'll have to leave that as a hi-tech marketing fantasy for now!

Our Consumer Help team will do what they can to support and continue your search. Many times we're able to find stores that might not carry Wallaby regularly, but that are willing to place special-orders for their customers. This means that they can order a case of Wallaby yogurt just for you. And they may also give a small discount for special-orders, since you are buying in volume! We find that smaller independent stores, like co-ops, are often the most willing and able to special-order products for their customers.

Eventually, we hope that the Wallaby brand will become popular enough so that stores everywhere will carry our yogurts. And that's also where you come in! You can show stores that there is a growing consumer demand for Wallaby, by telling them that you want to see our yogurts in their stores. One way to do this is by printing out one of our Store Request Forms (click here). Fill out the form and then turn it in to any store that you'd like to be able to purchase Wallaby from. You can also visit your store's website, and use their Contact Us section to put in a request for Wallaby. By doing these things, your store will be encouraged to carry the Wallaby products that you want because they'll know that there is a customer-base for them.

With so many of you wondering, "Where's Wallaby?!" we thought it might be time to blog some tips and tricks for locating our delightful, yet sometimes elusive yogurts!

If you're a first-time customer or have recently relocated, you might be wondering – what stores in my area carry Wallaby? The best place to start your search is the Store Locator on our website: www.wallabyyogurt.com/wheres-wallaby/store-locator. Most U.S. cities and large towns will have at least a couple of options; usually the larger the city you live in, the more stores you'll find carrying our yogurt. Stores that carry Natural and Organic products are often your best bet. Wallaby is available nationwide in Whole Foods Market, which typically offers the widest variety of our yogurts.

If our Store Locator turns up stores in your area, we encourage you to call the store before making your first Wallaby-run. This will ensure that the store is currently in stock and is carrying any specific flavors or varieties you might be looking for. Because we make over 30 different flavors and sizes of yogurt, many stores are not able to carry our entire assortment of products. We also suggest that when you call a store, you ask to speak to either someone in Customer Service or in the Dairy Department. Delectably rich, thick, and creamy... there's plenty to love about our new Organic Greek lowfat yogurt! Not only is Wallaby Organic Greek made with the highest quality organic ingredients, it's also strained. In Eastern Europe, this has been the traditional and authentic method for making yogurt, used for many centuries. However, some present-day yogurt eaters might be surprised to find that not all Greek-style yogurts here in the US are made in this traditional way.

When we decided to take on Greek yogurt, the founders of Wallaby tried every brand that they could get their hands on. What they discovered was that Greek-style yogurts that had been strained were far superior to those made using inferior processing methods (like added stabilizers and thickeners) which create an artificially thick texture.
