Napa Valley, California (February 26, 2013) – Wallaby Yogurt Company, a family-owned producer of organic yogurt, announces the launch of Wallaby Organic Greek Nonfat Yogurt. After its wildly successful introduction of Greek lowfat yogurts in 2012, Wallaby expands its Greek yogurt offerings to include a nonfat variety.

"When we launched our first line of Greek yogurts last year, we had no idea how popular it was going to be," said Kathy Housman, national sales manager for Wallaby. "Even though there were already a lot of competitors in the category, there weren't any offering a Greek yogurt that was organic and had the unique creaminess that Wallaby is known for. This became even more apparent after we launched and our sales went through the roof in the first quarter."

Having perfected its Greek yogurt recipe, Wallaby now plans to capture an even larger share of the Greek yogurt market with its new line of Organic Greek Nonfat Yogurt. According to Housman, nonfat yogurts represent the largest segment of competitors' Greek yogurt sales in the Natural Channel. Targeting the nonfat segment was the natural next step for Wallaby.

As we hop into the start of a new year, we here at Wallaby Yogurt Company are thankful that this past year has been such a great one. We stayed busy with the launch of our Authentically Strained Organic Greek Lowfat Yogurt in January 2012. And not long after, we were overjoyed to learn that Whole Foods Market had awarded Wallaby as their Supplier of the Year for Best New Product—in honor of our new Greek yogurts! Carrying the excitement and momentum from last year, we have even more to look forward to in 2013...

This month, you'll see our sophisticated new 16oz packaging hit store shelves. We recently updated the packaging for both our 16oz Greek Lowfat Plain Yogurt and our 16oz European-Style Sour Cream. These new containers have a novel shape and more attractive look that should make them easier to spot. And, of course, they still have the same great products inside.

It's that time of year again! Time to check in with our QC Manager, Jed, to see what he is whipping up for the holidays. Jed is one of the biggest foodies in the company, and a great resource for new recipes and inventive ways to use our products. Last year, Jed gave us a great recipe for Creamy Mushroom Chicken which featured our European-Style Sour Cream. This year, he brings us a quick and easy holiday treat.

Jed works hard each day to make sure every batch of yogurt we make is top-notch. A recent labor of love for Jed was helping create our line of Authentically Strained Organic Greek Lowfat Yogurts. He enjoys these new products for their richness and high protein content, and for their versatility in cooking and baking. For this holiday season, Jed has created a truly delicious and easy recipe that is sure to delight your family and guests.

Where is Wallaby?! - Part 3

Because stores are constantly changing their yogurt offerings, they often stop carrying certain flavors and/or brands to make room for new ones. It's always a disappointment when we hear from fans that they can no longer find their favorite flavor of Wallaby. In many instances, consumers look to us for an explanation as to why our yogurt was discontinued from a particular store or chain. Every now and then it's because we've actually stopped making that particular flavor. More often, however, it's because the retailer has decided to no longer carry it. Unfortunately, what many people might not realize is that we don't have much control over which yogurts stores decide to keep and which ones they choose to discontinue.

In some ways, our product distribution kind of works like network TV. Say you have a favorite show that you're really getting into. It's only been on the air for a couple of seasons, so it's just starting to develop a following. Suddenly, as you're gearing up for the next episode or season, you find out that the show's been cancelled and its timeslot is being filled with something else.

When this happens it's not something that the actors or producers making the show have control over—it's the network or TV station making the decision. So what do die-hard fans do when they hear that their favorite show is being cancelled? They tell the TV network that they're not happy about it. And sometimes, when enough fans make their opinion known, the network changes their mind and they bring the show back!

The same can be true for our yogurt and the stores where you shop. There are stores that will carry a certain flavor for a while, but then suddenly decide to take it off the shelf. When this happens, Wallaby fans often want to know why the flavor is gone and ask us to get it back on the shelf. However, just like the actors and producers of a promising yet cancelled TV show, we alone don't have the power to change a store's decision. What we want everyone to know is that you as consumers have the greatest influence over what stores decide to carry. So should your favorite flavor of Wallaby get discontinued from a store, we ask that you use your consumer clout to bring it back!

There are lots of ways to make your demand known. You can start by talking to the Customer Service or Dairy Department the next time you are at the store, and asking why they've stopped carrying your yogurt. You can also contact the store via their website's Contact Us section, and let them know they're making a mistake by not carrying your favorite flavor or variety of Wallaby. If your store has a Facebook page, you can also use their wall to let them know you'd like to see Wallaby brought back, as well as rally support from likeminded fans. By doing these things you will be exercising the power of your consumer voice, and as a result, you'll be much more likely to get the Wallaby flavor you've been missing back onto your store's shelves.

Sometimes our Store Locator might not turn up any results for a specific zip code or city where you're trying to find Wallaby yogurt. If this happens, don't lose hope! Our Store Locator is a great resource for starting your search; however, it comes with one small but important disclaimer. Because we don't sell our yogurt directly to stores, we don't always know exactly which stores are currently selling our yogurt. In many instances we rely on outside sales reps and even consumers to tell us where our yogurt is selling. And while we'd love to put a GPS tracking device on every case of yogurt we make—to see exactly where each ends up—we'll have to leave that as a hi-tech marketing fantasy for now!

• Where you live (city, state, zip)

• That the Store Locator on our website didn't turn up any results for your area

• What stores are in your area or where you tend to buy groceries

• Which flavor(s) or variety of Wallaby yogurt you're trying to find

Our Consumer Help team will do what they can to support and continue your search. Many times we're able to find stores that might not carry Wallaby regularly, but that are willing to place special-orders for their customers. This means that they can order a case of Wallaby yogurt just for you. And they may also give a small discount for special-orders, since you are buying in volume! We find that smaller independent stores, like co-ops, are often the most willing and able to special-order products for their customers.

Eventually, we hope that the Wallaby brand will become popular enough so that stores everywhere will carry our yogurts. And that's also where you come in! You can show stores that there is a growing consumer demand for Wallaby, by telling them that you want to see our yogurts in their stores. One way to do this is by printing out one of our Store Request Forms (click here). Fill out the form and then turn it in to any store that you'd like to be able to purchase Wallaby from. You can also visit your store's website, and use their Contact Us section to put in a request for Wallaby. By doing these things, your store will be encouraged to carry the Wallaby products that you want because they'll know that there is a customer-base for them.

Where is Wallaby?! - Part 1

Every day we hear from both new and long-time consumers who are looking for our yogurt. Sometimes they are trying to find a store in their area that carries Wallaby. Other times they can no longer find their favorite flavor in the store where they had been buying it regularly. With so many of you wondering, "Where's Wallaby?!" we thought it might be time to blog some tips and tricks for locating our delightful, yet sometimes elusive yogurts!

If you're a first-time customer or have recently relocated, you might be wondering – what stores in my area carry Wallaby? The best place to start your search is the Store Locator on our website: www.wallabyyogurt.com/wheres-wallaby/store-locator. Most U.S. cities and large towns will have at least a couple of options; usually the larger the city you live in, the more stores you'll find carrying our yogurt. Stores that carry Natural and Organic products are often your best bet. Wallaby is available nationwide in Whole Foods Market, which typically offers the widest variety of our yogurts.

If our Store Locator turns up stores in your area, we encourage you to call the store before making your first Wallaby-run. This will ensure that the store is currently in stock and is carrying any specific flavors or varieties you might be looking for. Because we make over 30 different flavors and sizes of yogurt, many stores are not able to carry our entire assortment of products. We also suggest that when you call a store, you ask to speak to either someone in Customer Service or in the Dairy Department. These will likely be the best people to answer any questions about what Wallaby items their store carries.

Delectably rich, thick, and creamy... there's plenty to love about our new Organic Greek lowfat yogurt! Not only is Wallaby Organic Greek made with the highest quality organic ingredients, it's also strained. In Eastern Europe, this has been the traditional and authentic method for making yogurt, used for many centuries. However, some present-day yogurt eaters might be surprised to find that not all Greek-style yogurts here in the US are made in this traditional way.

When we decided to take on Greek yogurt, the founders of Wallaby tried every brand that they could get their hands on. What they discovered was that Greek-style yogurts that had been strained were far superior to those made using inferior processing methods (like added stabilizers and thickeners) which create an artificially thick texture.

Straining is a process by which excess liquid is removed from yogurt. By using this process, we achieve a genuine Greek yogurt that is naturally rich in protein and has a deliciously thick texture. We combine the time-honored method of straining with our proprietary unhurried cooking process. This gives our Organic Greek yogurt the distinct and delightful flavor for which all Wallaby products are known.

Napa Valley, California (February 7, 2012) – Wallaby Yogurt Company, a family-owned producer of organic yogurt, announces the launch of its first line of organic Greek yogurts. Known for its signature line of creamy Australian-style yogurts, the company continues in its mission to make the best-tasting yogurt in the US by expanding its yogurt offerings into the Greek category.

"Initially, there was some hesitation when it came to launching a Greek yogurt. The style and method of manufacturing Greek yogurt is very different from our signature product line," said Jerry Chou, founder and president of Wallaby. "But as we started to realize how delicious Greek yogurt can be, it became clear that this was the direction we wanted to go in."

Once the founders had decided this, they tried every brand of Greek yogurt that they could get their hands on. When they were done, they ultimately concluded that there just weren't any organic Greek yogurts out there that tasted really great. What followed was an intense effort of repeated trial and error, to come up with what they ultimately felt would be a Greek yogurt unmatched in taste.

What’s new, Honey?

It's been a thrilling, hectic, and overall gratifying last few weeks here at Wallaby, as we've been producing and shipping out the first batches our new organic Greek yogurt. One of the really exciting parts about launching a new product line is the new flavors that come with it. So it's no surprise that our new honey flavor has created quite the buzz around our hive!

For years we've been getting requests from consumers to make a yogurt with honey. As we were developing our Greek yogurt, we knew that it was going to be the perfect opportunity to make this happen. It took months to find just the right source of organic honey that would pair perfectly with our style of yogurt. Once we did, it was heartening to know that we'd be launching a flavor that would be both a sweet treat for the palate and packed with natural health benefits.

Honey is a great natural sweetener. Unlike processed sugars or artificial sweeteners, it naturally contains antioxidants and other essential nutrients—and it's also easier for the body to digest. Honey is said to be an excellent natural energy booster. At the same time, it's also known to help maintain relatively constant glucose levels in the body, preventing those frustrating highs and lows caused by regular sugar. On top of that, the honey we've chosen is certified organic, meaning it won't have any traces of chemicals or pesticides that can negatively alter the taste. So enjoying a cup of our Greek yogurt with honey means that you're not only doing good for your health, but also the environment.

For all the honey lovers out there, you probably know that honey can sometimes be a pretty sticky ingredient to work with (pun intended)! Honey has a natural tendency to crystallize, or form sugar granulations, due to its composition. When this happens, the honey can become cloudy, and thick or even hard in texture. Some honey has preservatives or additives to stop this natural process from occurring. The honey we use is organic so it does not, which adds a little extra challenge in making this particular flavor. There is no foolproof way to know when honey is going to crystallize, and we recently discovered that this may have occurred in one of our first batches, after we shipped it out from here. If you find a cup where this seems to be the case, we hope you'll write to us and let us know . We always appreciate getting feedback from our customers, and will especially as we perfect our process of making this new flavor!

Introducing… Wallaby Organic Greek

It's the start of a new year, and one that we here at Wallaby have eagerly been awaiting. That's because we're kicking off 2012 with the launch of one of our most exciting product lines yet – Wallaby Organic Greek yogurt!

For a while we've known that we wanted to make a Greek-style yogurt. Our desire became clearer after our founders spent a weekend trying every brand of Greek yogurt that they could get their hands on. When they were done, they ultimately came to the conclusion that there just weren't any organic Greek yogurts out there that really tasted great. This discovery was reminiscent of how Wallaby got its start. It was over 20 years ago that our founders travelled to Australia, where they tried a style of yogurt that was unmatched by any of the yogurts back home. When they returned, they were genuinely inspired. Their mission became to make the best-tasting yogurt in the US. And that's what they did when they created our signature line of Australian-style yogurts.

It's in continuing with this mission that we now proudly introduce our new line of organic Greek lowfat yogurts. We think you'll find our Greek to be exceptional for the same reason that all Wallaby Organic products are exceptional. We start with the highest quality organic ingredients. We then develop the body of our yogurt authentically and naturally, without the use of starches or other artificial thickeners. Our Greek yogurt is strained, which is the authentic way of producing the thick, rich texture that has made Greek yogurt so popular. We then use our traditional slow-cooking method to create the delightful creaminess and delicate flavor that makes our Greek yogurt worthy of the Wallaby Organic label. To top it off, we've packaged our flavored varieties in a unique two-compartment cup, allowing you to control how much fruit you get with each satiating spoonful of thick and creamy yogurt.

We're more than excited to start off this New Year with a brand new yogurt, and we hope that you will be too! As one might imagine, foodies are not hard to come by in a company like ours. While we have many here at Wallaby, one of our biggest foodies happens to be our QC Manager, Jed Dante. With a degree in food science and professional training in the culinary arts, Jed oversees the development of our products from start to finish. Once a new product is launched, Jed makes sure that every batch produced from then on is of superior taste and quality—meeting the standards of even the toughest foodie.

If you've had Wallaby products before, you've probably noticed that they're distinctively different from other brands. We find that the products we make are unique, in part, because of the people who make them. And as you may have guessed, Jed's as unique as they come!

Jed doesn't let his work stop in the lab. Ask any Wallaby employee and they'll tell you one of the greatest perks of working here is Jed's cooking. Jed's culinary creations are often the highlight of our company potlucks. And whenever anyone is in need of a Wallaby recipe, Jed is the first person we turn to. Our decadently rich European-Style Sour Cream is among one of the many amazing Wallaby products that Jed has developed, and has then shared with us through his cooking. So in the spirit of the season, and in recognition of Jed, we thought we'd share one of his delicious recipes with you!

For those of you who have come to love Down Under, we don't have to tell you what makes it stand out from ordinary fruit-on-the-bottom yogurts. It's the abundance of pure fruit and flavor, layered under our delectably creamy, Australian-style yogurt that keeps us all wanting more. You've probably also noticed with Down Under, mixing is optional. That's because our fruit "down under" isn't the syrupy jam or jelly that you typically find at the bottom of other yogurts. Down Under has real chunks of premium organic fruit with slightly sweetened yogurt on top, so it can be savored layer by layer or like a parfait... no stirring necessary!

Those of you who are longtime fans of Down Under may also be wondering, what happened to the clear cup? Some have noticed that we recently started packaging Down Under in the same cup that we use for our blended yogurts. Why the switch? Over time we found that our white cup does a better job of protecting the quality of flavor and freshness, something we felt the clear cup just wasn't doing 100% of the time. So we moved Down Under into our white cup and gave it a bright new look, which should make it easier to spot your favorite flavor on the shelf.

While the cup has changed, the delicious recipe that made us all fall in love with Down Under has not. You'll still find the same generous amount of fruit and flavor at the bottom of every cup. So grab your spoon and decide: Mix it all up? Delight in the creamy yogurt first, and save the fruit for last? Or dive straight to the bottom for a wallop of flavor? However you choose to enjoy it is all part of the Down Under experience!

Hey, have you seen "the Whole Story" about Wallaby? Whole Foods Market recently took the time to interview our VP of Operations and one of our milk suppliers, Beretta Dairy, to find out more about who we are and how we make our products. Several years ago when the organic milk supply in Northern California became limited, our President sought out local, independent dairy farmers with which to partner. Today, we are proud of the partnerships we have created with the eight family-owned dairies that supply the organic milk going into all of our products.

"One of our core beliefs is that we can be successful at what we are doing, while treating people right. And this goes for everyone we interact with—our employees, our farmers, our suppliers, retailers, our customers. At the end of the day we want to be proud of what we've created and we want to be even more proud of the manner in which we created it.
