What’s new, Honey?

Wallaby Organic Greek Yogurt with Honey

It's been a thrilling, hectic, and overall gratifying last few weeks here at Wallaby, as we've been producing and shipping out the first batches our new organic Greek yogurt. One of the really exciting parts about launching a new product line is the new flavors that come with it. So it's no surprise that our new honey flavor has created quite the buzz around our hive!

For years we've been getting requests from consumers to make a yogurt with honey. As we were developing our Greek yogurt, we knew that it was going to be the perfect opportunity to make this happen. It took months to find just the right source of organic honey that would pair perfectly with our style of yogurt. Once we did, it was heartening to know that we'd be launching a flavor that would be both a sweet treat for the palate and packed with natural health benefits.

Honey is a great natural sweetener. Unlike processed sugars or artificial sweeteners, it naturally contains antioxidants and other essential nutrients—and it's also easier for the body to digest. Honey is said to be an excellent natural energy booster. At the same time, it's also known to help maintain relatively constant glucose levels in the body, preventing those frustrating highs and lows caused by regular sugar. On top of that, the honey we've chosen is certified organic, meaning it won't have any traces of chemicals or pesticides that can negatively alter the taste. So enjoying a cup of our Greek yogurt with honey means that you're not only doing good for your health, but also the environment.

For all the honey lovers out there, you probably know that honey can sometimes be a pretty sticky ingredient to work with (pun intended)! Honey has a natural tendency to crystallize, or form sugar granulations, due to its composition. When this happens, the honey can become cloudy, and thick or even hard in texture. Some honey has preservatives or additives to stop this natural process from occurring. The honey we use is organic so it does not, which adds a little extra challenge in making this particular flavor. There is no foolproof way to know when honey is going to crystallize, and we recently discovered that this may have occurred in one of our first batches, after we shipped it out from here. If you find a cup where this seems to be the case, we hope you'll write to us and let us know . We always appreciate getting feedback from our customers, and will especially as we perfect our process of making this new flavor!

Introducing… Wallaby Organic Greek

Authentic Strained Lowfat Yogurt

It's the start of a new year, and one that we here at Wallaby have eagerly been awaiting. That's because we're kicking off 2012 with the launch of one of our most exciting product lines yet – Wallaby Organic Greek yogurt!

For a while we've known that we wanted to make a Greek-style yogurt. Our desire became clearer after our founders spent a weekend trying every brand of Greek yogurt that they could get their hands on. When they were done, they ultimately came to the conclusion that there just weren't any organic Greek yogurts out there that really tasted great. This discovery was reminiscent of how Wallaby got its start. It was over 20 years ago that our founders travelled to Australia, where they tried a style of yogurt that was unmatched by any of the yogurts back home. When they returned, they were genuinely inspired. Their mission became to make the best-tasting yogurt in the US. And that's what they did when they created our signature line of Australian-style yogurts.

It's in continuing with this mission that we now proudly introduce our new line of organic Greek lowfat yogurts. We think you'll find our Greek to be exceptional for the same reason that all Wallaby Organic products are exceptional. We start with the highest quality organic ingredients. We then develop the body of our yogurt authentically and naturally, without the use of starches or other artificial thickeners. Our Greek yogurt is strained, which is the authentic way of producing the thick, rich texture that has made Greek yogurt so popular. We then use our traditional slow-cooking method to create the delightful creaminess and delicate flavor that makes our Greek yogurt worthy of the Wallaby Organic label. To top it off, we've packaged our flavored varieties in a unique two-compartment cup, allowing you to control how much fruit you get with each satiating spoonful of thick and creamy yogurt.

We're more than excited to start off this New Year with a brand new yogurt, and we hope that you will be too! Throughout the month of January, Wallaby Organic Greek lowfat yogurts will be hitting the shelves at Whole Foods. Look for them there soon. Cooking with Jed

Wallaby's Resident Culinary Artist

As one might imagine, foodies are not hard to come by in a company like ours. While we have many here at Wallaby, one of our biggest foodies happens to be our QC Manager, Jed Dante. With a degree in food science and professional training in the culinary arts, Jed oversees the development of our products from start to finish. Once a new product is launched, Jed makes sure that every batch produced from then on is of superior taste and quality—meeting the standards of even the toughest foodie.

If you've had Wallaby products before, you've probably noticed that they're distinctively different from other brands. We find that the products we make are unique, in part, because of the people who make them. And as you may have guessed, Jed's as unique as they come!

Jed doesn't let his work stop in the lab. Ask any Wallaby employee and they'll tell you one of the greatest perks of working here is Jed's cooking. Jed's culinary creations are often the highlight of our company potlucks. And whenever anyone is in need of a Wallaby recipe, Jed is the first person we turn to. Our decadently rich European-Style Sour Cream is among one of the many amazing Wallaby products that Jed has developed, and has then shared with us through his cooking. So in the spirit of the season, and in recognition of Jed, we thought we'd share one of his delicious recipes with you!

It's all about the Down Under™

The New Look of Fruit on the Bottom Yogurt

For those of you who have come to love Down Under, we don't have to tell you what makes it stand out from ordinary fruit-on-the-bottom yogurts. It's the abundance of pure fruit and flavor, layered under our delectably creamy, Australian-style yogurt that keeps us all wanting more. You've probably also noticed with Down Under, mixing is optional. That's because our fruit "down under" isn't the syrupy jam or jelly that you typically find at the bottom of other yogurts. Down Under has real chunks of premium organic fruit with slightly sweetened yogurt on top, so it can be savored layer by layer or like a parfait... no stirring necessary!

Those of you who are longtime fans of Down Under may also be wondering, what happened to the clear cup? Some have noticed that we recently started packaging Down Under in the same cup that we use for our blended yogurts. Why the switch? Over time we found that our white cup does a better job of protecting the quality of flavor and freshness, something we felt the clear cup just wasn't doing 100% of the time. So we moved Down Under into our white cup and gave it a bright new look, which should make it easier to spot your favorite flavor on the shelf.

While the cup has changed, the delicious recipe that made us all fall in love with Down Under has not. You'll still find the same generous amount of fruit and flavor at the bottom of every cup. So grab your spoon and decide: Mix it all up? Delight in the creamy yogurt first, and save the fruit for last? Or dive straight to the bottom for a wallop of flavor? However you choose to enjoy it is all part of the Down Under experience!

Whole Foods Market recently took the time to interview our VP of Operations and one of our milk suppliers, Beretta Dairy, to find out more about who we are and how we make our products. Several years ago when the organic milk supply in Northern California became limited, our President sought out local, independent dairy farmers with which to partner. Today, we are proud of the partnerships we have created with the eight family-owned dairies that supply the organic milk going into all of our products.

Napa Valley, California (August 30, 2011)  -- Wallaby Yogurt Company, a  familyowned producer of organic yogurt, announces the release of two  new product lines, Wallababy™ Organic Whole Milk Yogurt for Babies and Joey™ Organic Lowfat Yogurt for Kids.  Children and  growing  families are some of Wallaby’s most enthusiastic consumers, so their needs have long been a focus of Wallaby’s creations. Now the company will offer yogurts specifically formulated and packaged for babies and children.

For a while now, customers have been asking us to make a whole milk yogurt for the youngest of Wallaby fans, babies 6 months and older. After taking the time to do the research and develop a product that we'd proudly call our own, we have finally done it!

We are proud to introduce Wallababy™ Organic Whole Milk Yogurt for Babies. We created it using organic higher fat milk recommended for babies and added zinc and vitamin D to further meet your baby's growing needs. Wallababy can be purchased at Whole Foods Market in both Banana and Blueberry flavors. Wallababy is sold in a 4 pack of 4oz cups, perfect for your baby's appetite.

Early trials on focus groups (our own babies) were full of comments like "Gaa baa boo daa" and "Ffrbbbt ba dab bobo". Our translation experts tell us that these babies were singing the praises of this "delicious yogurt that is like no other." Okay, so maybe the exact translation is debatable but empty yogurt containers and lots of smiles were all the proof we needed to know we had created something babies will love.

Introducing... Joey™

Organic Lowfat Yogurt for Kids

Wallaby has always been a family-owned, family-friendly company. Our children and families are first in mind, when it comes to how we make our products and run our business. So for years we've dreamed about launching a line of organic yogurt, specifically for kids. Coming up with the name "Joey" (as in "young wallaby") was the easy part. Creating the perfect yogurt – low in fat and sugar but full in flavor – took a little longer. But we think the wait was worth it and we're thrilled it's finally here. Joey™ Organic Lowfat Yogurt for Kids is currently hitting the shelves of Whole Foods stores across the country!

Joey is our signature Australian-style lowfat yogurt, fortified with vitamin D. We've carefully selected kid-friendly flavors that are smooth with just the right amount of sweetness. Packed in a 4oz cup, it's the perfect snack size for joeys ages 2 and up.

Early trials on focus groups (our own kids) were full of comments like "Mmmm, this is so good! Can I have another?" and "I love the grape, it makes my mouth happy" and "Mom, this is the best yogurt ever". We kid you not. Our kids simply loved this product and we think yours will too.

Do things look a little different around here?

For the last several months we've been working diligently to bring our online community a redesigned, more user-friendly website. Not the easiest assignment, when you're a small company like ours. But with the help of our friends at Earthsite, we've been able to create a clean, easy to navigate website, that will give our fans and those new to Wallaby a better understanding of what we're all about.

We hope first-time visitors will click around and stay a while. We want everyone to know where Wallaby is made (not Australia), where we get our milk (not from kangaroos), and what makes our products so unique. And for those returning, our new blog will offer the latest news and new products from Wallaby Organic.
